The weight removed would be negligible. The real question between those two would be, which would stifle heat dissipation more: removing the dissipation material completely, which polishing does, or covering that material with a PC/chrome. The plenum with throttle bodies, linkage and balance tube weighs 26 lbs. This is sprung mass so I don't see weight being crucial, even if you managed to remove one pound of it which I doubt.
